Adobo Mushroom Tacos

This video is something new I tried as I feel like it would be a great way to present my content. When i was learning how to cook, reading off of textual representations of recipes was initially quite unhelpful when it came to the actual cooking. As a home chef, you pick up very quickly that what the recipe asks of you and what you have available at the moment are usually differing. Going out and recreating the recipe exactly every time is not sustainable as it eats up a lot of your time which is inefficient. When you attempt making modifications or cook without visual aid, newer chefs , are usually not very confident when cooking initially. Considering the fact that cooking anything at home is an investment of not only your time and money but also an investment into your health as you are not eating outside food. To close that gap, a video which shows you the recipe step by step and quantifies the steps of the process along the way so you don’t have to guess whether or not you are doing it right. I hope you guys enjoy this little insight into the shift in content!

Mushroom seasoning ingredients –

1Lb of mushrooms (I used Baby Bella mushrooms but anything works. May require more mushrooms as the mushrooms shrink in size after baking)

2 Tbsp of oil with a high smoking point such as avocado oil preferably or olive oil 2 Tbsp. fresh lime juice (one medium lime)

1 Tbsp. dried oregano

1 1/2 Tbsp Garlic and herb seasoning from Costco (Can be subbed with garlic and onion powder with 3/4 tbsp of each)

2 tsp. ground cumin

2 tsp. organic cane sugar or any sugar for that matter

1 tsp. cayenne pepper (can be subbed with paprika and chili powder and reduced depending on how much spice you like)


Pico De Gallo Ingredients – 3 medium tomatoes

1 medium red or white onion

1/4 cup of fresh lime juice (4 medium limes)

1 medium jalapeno (if you like a kick to your pico)

1/2 a cup of finely chopped cilantro (About 1/2 a bunch) Salt to taste


Miscellaneous Ingredients –

Tortillas (Can be any type really depends on what you want. I used almond flour tortillas in the video)

1 avocado


Steps:

1. Wash and squeeze your mushrooms to remove excess water.

2. Chop your mushrooms and combine them in a bowl with the seasonings listed above.

3. Pop them in the oven for 20-25 minutes at 400 degrees Fahrenheit

4. While the mushrooms bake, get started on your pico de gallo by dicing your tomatoes, and finely chop your onion, jalapeno, and cilantro.

5. Once chopped, combine the onions jalapenos, lime juice, and salt. Let it sit and marinate for 5 or so minutes to really absorb the flavors.

6. Once marinated stir in your tomatoes and cilantro. Taste and add salt as necessary to get the style of pico you are looking for.

7. Once done with the pico slice an avocado open and turn into slices for the plating process.

8. Once your mushrooms are done you can warm your tortillas.

9. Once warm place your tortilla, 3-4 slices of avocado, mushrooms, pico, and any other garnishes you may desire on your tacos and enjoy a refreshing, healthy, and delicious meal.
